For both flavour and texture, not much beats Turbot. Landed in Kilmore Quay, Co. Wexford, Turbot has a white, buttery soft flesh and a subtle salty flavour. Fillets are often pan-roasted: fried for a few minutes on the outside to give a good sear, and then placed into a hot oven for 4-6 minutes to finish off the middle without overcooking the outside. Sourced from M Wright & Sons, a family business established in 1930. The company is dedicated to sourcing the best quality fish and have a buyer in every port in Ireland. Subject to fishing quotas they always buy Irish first offering small producers and fishermen access to larger markets.
