Fregola Sarda, or Fregula, is a traditional Sardinian pasta similar to North African berkoukes and Israeli couscous. Fregola consists of semolina dough that has been rolled into balls 2-3 mm in diameter and toasted in an oven creating a pleasing nutty flavour.
It's often cooked like other types of pasta, in salted boiling water, but it can also be cooked in a similar fashion to rice or added to the soup pot. Fregola con arselle is a typical preparation of fregola, where the pasta is simmered in a tomato-based sauce with clams.
