Bome Speck is crafted using the hind leg of the finest quality pig, ensuring optimal taste and texture. The leg is expertly rounded at the tip, trimmed, and meticulously cleaned to perfection. It then undergoes a meticulous dry-brining process with a blend of salt, pepper, and juniper, allowing the flavours to penetrate and develop over a minimum of three weeks. The meat is lovingly rubbed and cared for during this time, ensuring an exceptional taste experience.
After the salting process, the meat enters a special smoking room where it is delicately infused with the aromas of specific sawdust and juniper. This smoking process adds a distinctive character to the speck, creating a harmonious balance of flavours. Once smoked to perfection, the speck is hung in carefully selected curing rooms, each tailored to achieve the desired characteristics of the final product.
