Eurial's Goats Cheese Log is made using lactic coagulation of milk and then pasteurised. A small amount of rennet and salt is added and then it is matured in a temperature controlled environment called ‘hâloir’. Penicillium grows creating the typical mould on top of the cheese. 7 to 9 days for ripening. As it matures, taste becomes bolder and texture softer. Eurial's recipe uses microbiological enzymes (non-animal). Eurial products are therefore suitable for vegetarians.
