Gubbeen Oak Smoked Matured Cheese Wheel 1x3.5 KG
Gubbeen Farm's smoking system is the Pinney system; Pinney's of Orford taught their friend Chris Jepson how to smoke his salmon. He designed his smoke box from their clever and subtle design and when he finally retired he passed this skill on to Fingal. Gubbeen's cheeses are now smoked at the dairy in Gubbeen. They wax the smoked cheese in a black wax from Holland called Ceska, this keeps the smoke in and yet lets the cheeses breath as they mature. The result is a gentle smokiness that doesn’t overpower the beautifully complex flavour of the cheese. The herd is a mix of breeds: pure-bred Friesians, Simmentals, whose milk is also famously used in Emmenthal, Jerseys, Shorthorns and black Kerry's, a rare, local breed. All of these breeds produce quite low volumes of milk with high solids, which is good for cheese making. Giana’s husband Tom’s family have farmed at Gubbeen for several generations. Giana came from Spain via France, with a cheese making background. She is responsible for the cheeses; he, the milk.
