Although oily, with a firm and rich flesh, tuna is the most meaty of fish. It works particularly well seared in Mediterranean or Asian dishes, but avoid baking as it can dry out. The fresh tuna loin is supplied vacuum packed and whole, to allow chef to control portion size. Sourced from M Wright & Sons, a family business established in 1930.
