To ensure our Fiordilatte log reaches every corner of the world, The Amodio Family have created the 100% Lavorazione Italiana line, combining the expertise of their cheesemakers with innovative preservation techniques. This stretched curd cheese, made from pasteurized cow's milk, is primarily used in the kitchen, especially for the preparation of pizza. Its main ingredients include salt, rennet, and lactic ferments.
The meticulous process involves heating whole cow’s milk, adding raw cow’s milk whey and liquid calf rennet, allowing natural fermentation and maturation of the curd. The curd is transformed into strips, cut, stretched, and then hardened in containers filled with cold water. After salting, the Fiordilatte log is packaged in a protective atmosphere.
