We have developed a pan-seared pork chop with colcannon, spiced apple sauce and cider jus recipe - the perfect winter dish for takeaway menus.
- For the apple sauce, combine the vinegar and sugar in
a pot. Add the apples all of the remaining ingredients for
the apple sauce. - Place over a high heat and bring to the boil. Reduce the
heat and simmer for 35-40 minutes until reduced and
thick but still with some lumps. Transfer to a bowl to cool - Simmer the stock and cider together to form the cider
gravy. - Pan-sear the pork chops and finish in the oven. Allow to
rest, then stir any juices that have ben released into the
gravy. - Blanch the curly kale in salted water and refresh
- Heat a deep pan over a medium heat and melt the
butter. Sweat the leeks until soft. Add the kale and season,
then stir in the cream - Add the mashed potato and scallions and beat together.
